Lemon Poppyseed Scone Mix
Our artisan-made Lemon Poppyseed Scone Mix will be the talk of your tea party! They are definitely tea-room quality. They come out fluffy every time, even right from the freezer!
All that you need to add to the base mix is 3/4 cup (1 1/2 sticks) butter, 1 cup buttermilk (or vegan alternatives), 2 TBS lemon juice (divided), and 1 cup powdered sugar (optional for glaze, if desired).
You can enjoy these delicious scones as directed on the package or make the whole batch and freeze them for another day. Perfect to have on hand for that unexpected guest or that spur-of-the-moment tea party! They only take 13-18 minutes to bake (depending on your oven).
Once the dough is cut into scones, either the triangle shape or bisquit shape, lay them on a cookie sheet lined with parchment paper. Place the uncovered cookie sheet into the freezer for 2 hours. Once they are frozen, remove the scones (they come off easily) and wrap with plastic wrap or place in a zipper freezer bag. Don't forget to mark the outside of the bag with the date, scone flavor, and oven temperature (425°). Return your scones to the freezer. They stay fresh in the freezer for up to 2 months!
Baking Your Frozen Scones:
Make sure your oven is pre-heated before putting your scones in the oven. This makes a difference in the results of your scone. Place your straight-from-the-freezer scones onto a parchment-lined cookie sheet. Bake for 13-15 minutes and then check your scones. If the scones are dough-like, cook 1-2 minutes longer and test again. Repeat another 1-2 minutes if necessary. Keep a close eye on them at this point. Remove immediately from the oven once the scones are a golden brown on top. It is normal for the scones to take an additional 3-5 minutes longer to cook if they go into the oven frozen.
Serve with warm butter or with a glaze.
For glaze: Mix 1 cup powdered sugar, 1 TBS lemon juice to desired consistency (add more or less sugar as needed). Brush on top of warm scones.
